SUMMIT COUNTY – Summit County, in partnership with the Physical Activity and Nutrition Team of the Summit (PANTS), is promoting healthy cooking and eating on National Food Day, Oct. 24, with hands-on educational events throughout the community.

“We’re celebrating real food and good nutrition by sharing easy, practical ways that local families can prepare healthy, affordable, delicious meals,” said Whitney Smith, director of the Summit County Supplemental Nutritional Assistance Program for Women Infants and Children (WIC). “We’re going to be handing out recipes, offering tips and giving cooking demonstrations so you can bring these strategies straight into your own kitchen.”

Each year, PANTS celebrates National Food Day by shining the spotlight on a different vegetable and sharing ways to incorporate it into everyday meal preparation. This year the focus will be zucchini.

“Zucchini is such a great vegetable – it’s inexpensive, very low in calories, high in fiber and has more potassium than bananas,” Smith said. “Zucchini is one of those foods that we can use in lots of different ways. I even throw it in my brownies to make them a little healthier.”

PANTS representatives will have booths set up at local grocery stores from 4-6 p.m. on Monday, Oct. 24. They’ll provide live demonstrations of zucchini recipes and offer free samples, along with recipe cards and nutrition education. The booths will be located at City Market in Dillon, Whole Foods Market in Frisco, Natural Grocers in Frisco and City Market in Breckenridge.

PANTS is a diverse coalition of organizations and individuals in Summit County that works to promote healthy eating and active lifestyles. Coalition members include local government agencies, health care providers, nonprofits and local businesses.
